The Beer Lover's Table: Tostones (Twice-Fried Plantains) with Mojo Sauce and Indie Rabble Wet George Double IPA

Eight years ago, a friend of a friend invited me to her home and made tostones for me. I watched as she removed the plantains from their thick green peels, fried inch-thick coins of them, smooshed them flat, then fried them again. She served them with mojo – a vivid green sauce of coriander, citrus, oil, and spice – and we ate them, still radiating heat from the fryer, their dusting of sea salt crackling between our teeth. I’ve wanted to make tostones for myself ever since, but never did – perhaps intimidated by the deep-frying (which I’ve since learned is...

Fundamentals #135 — Makemake Nothing Cannot Exist Forever Double IPA

Everything is finite. The delicious beer I have in my glass right now isn’t going to last forever. I wish it would though – I could stand to have my senses over-saturated by its waves of mango and papaya deliciousness until the heat death of the universe. This is not a beer to be trifled with at 8.5% – especially considering it’s exceptionally easy-drinking nature – but with time and respect, you’ll likely want to spend an eternity with this luscious, New England-style Double IPA too. But who the hell is Makemake (pronounced mah-kay mah-kay) anyway? The brewery doesn’t have much of a...

Fundamentals #116 — Sureshot Bring Me The Head of John the Accountant Double IPA

The term “nature is healing” has perhaps been a tad overused during the past couple of years – although the other week, a new brewery opened in Manchester, which after months of pub closures and pandemic anxiety genuinely felt like a return to something resembling normality. One I took great comfort in. Nestling into the railway arch on Sheffield Street, right behind Piccadilly Station and formerly occupied by Track Brew Co (which has moved just down the road to its spacious new home on Piccadilly trading estate) Sureshot Brewery already feels cemented in place; a key fixture in the thriving...

Fundamentals #99 - Mountains Walking Tin Sky DDH DIPA

I’ve been an admirer of beer for as long as I’ve been allowed to drink it. But my first trip to the US in July 2010 was what turned me into a true enthusiast, eventually pushing me into a career writing about the stuff. I talk about this often – that first taste, that epiphany, that crystalline moment – when I tasted Odell Brewing’s eponymously named IPA at their tasting room in Fort Collins, Colorado and everything changed. And that’s because this moment continues to be important to me, as is the enthusiasm it still generates within me to this day. The...
