Beer #24 - Simple Things Fermentations Belgian Christmas And so to our Christmas Eve beer, the cherry on the top of our HB&B advent. Simple Things Fermentations is a small Glasgow brewery doing great things. Here in South London, STF may not have the instant name recognition of, say, a Verdant or a DEYA, but the quality of the beers speak for themselves - every one's a winner. When founder Phil kindly sent us a sample of this Belgian-style Christmas ale, we knew we'd found our Christmas Eve beverage. Lightly hopped, this is packed with all those classic Belgian flavours we love...

The Beer Lover's Table: Aubergine Massaman Curry and Boxcar Brewery Double Dark Mild

If sourdough bread was very Lockdown 1, then Lockdown 3 looks more like one-pot cooking projects: long-simmered stews, tender meatballs, creamy pasta dishes. In the middle of a deep cold snap, the stove is the warmest place in the house, and standing in front of it for an extra hour or two has never felt so inviting.  Of course, there are other sensory pleasures to be had there, beyond the heat thrown off by the gas burners. If you’re making this Thai massaman curry, you can luxuriate in its beguiling, house-filling perfume right at the source. The fragrance is complex...

Fundamentals #70 — Boxcar English Porter

It’s fun to watch Boxcar’s head Brewer Sam Dickison work. He exudes a zen-like calm, even when his situation becomes a little more stressful. Arriving at the taproom one Friday early in 2020, I witnessed Sam under slightly more duress than usual. He was brewing with an experimental dark malt from Simpson’s, one of the UK’s largest and most well-regarded malt producers. Called Roast 200, it’s meant to produce a beer deep brown in colour, full of roasted coffee flavours and aromas, but the brew was taking a bit longer than it should. Malt is in a fascinating place at...

Fundamentals #67 — Unity x Boxcar x Duration Root Down No Coast IPA

I’m excited to see the return of the dynamic trio that is Boxcar, Duration and Unity. For my money, these are three of the most exciting breweries to have emerged on the UK scene during the past couple of years. They’ve got form too, as previously they collaborated on a tart and refreshing farmhouse-style IPA called From the Ground Up, back in 2018. The result of this collaboration was a lasting bond forming between the founding brewers of these exciting beer makers. Boxcar’s Sam Dickison, Duration’s Derek Bates (or just Bates, if you please) and Jimmy Hatherley of Unity have...
