These vineyards are chosen for the peculiarity of their soils (clay loam with a limestone layer) and their vine ages, ranging from 25 to 60 years old. No chemicals are used in the vineyards, only minimal copper or sulphur if absolutely necessary, with manual harvests. The result is elegant, pure, low intervention wines that reflect place and restraint.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eHere, Sauvignon Blanc grapes were hand-harvested then carefully selected, undergoing spontaneous fermentation with wild native yeasts, on skins for 3 months before a further 2 months in tank with no sulphur or additives before bottling. This result is ridiculously ripe juice - like drinking a passionfruit, along with tropical notes of tinned mango, tangerine, peach and a touch of bruised red apple.
