Winemakers Geneviève and Gilles Azam live and work at the top of a 600m summit surrounded by an amphitheater of vineyards on slopes made up of fossil-filled clay-limestone and sandstone. All of their vineyards are farmed organically, grapes are hand harvested, and all wines fermented spontaneously using native yeasts, with no additions apart from minimal sulphur.\u003c\/p\u003e\n\u003cp\u003eThis elegant white is a blend of local grapes - Mauzac, Chardonnay, along with Sauvignon Blanc and Chenin Blanc, made without any oak ageing. The grapes come from vineyards on north facing slopes on the highest part of the domaine which maintains acidity and freshness.
